I've been told that often when submitting to Altavista, you will be indexed the next Monday. . . Well last Monday came and went, and I was nowhere to be found. It is Monday again (morning), and I'm just hoping for some good luck. Any comments on this? Also, lets say my site is in, but buried deep, what methods can help me find my site in Altavista? Thanks.

"indexed the next Monday"
The Monday thing used to be true but as of lately it hasn't been that reliable. I wouldn't count on it working this quickly.

"what methods can help me find my site in Altavista?"
Do a search for www.mydomain.com and find your listing and then click on the link for "More pages from this site". This should allow you to see what pages you have indexed.

AV updated yesterday. It added one page that I submitted on 29/9.

The pattern that I (and others) have seen is that you get indexed on the 2nd Monday after you submit. Therefore it takes between 8 and 14 days to get listed, depending on when you submit. If you submit before next Monday you should be listed on the 23rd. (Fingers Crossed !)
