I'm interested in acquring a domain name that's in the pending delete stage, this domain IS listed on sites that have lists of expiring domains (though that's not how I found out about it - wasn't even looking just found out by accident) does this mean that it will definately be grabbed by a dropcatching service or is there a chance that the domain will actually become available for me to register? I don't want to use a third party service because i don't want to spend $100s on the domain (I won't make any money out of it) but it is something i'd like very much to acquire.
Do drop catchers only "catch" domains people have acutally expressed interest in or do they pretty much just catch everything that's up for grabs?

If it is a very good/catchy domain....it will most likely be grabbed by a dropcatcher service....it's best you put your backorders in for it so you can compete for it. Too risky to take chance that no one will grab it.
Some services actually do grab domains with no backorders in....then try to auction for next 3 days.
