The content that you want to publish on a website should be unique, so even if you take knowledge about the subject from any source, it should be written in your words

I am more bothered about copyright issues really.

|Is it ok to rewirte EzineArticles, or are they not meant to be rewritten or reused? |
Read the terms/policies on the EzineArticles site.

Those terms make it very clear...
|If you wish to publish/reprint any article from our site in your ezine, website, blog, forum, RSS feed or print publication, you must: |
* Respect the copyrights of the authors by publishing the entire article as it is with no changes.
* Agree to include the FULL Resource box or SIG line at the end of the article.
* Agree not to change the title or content of the article in any way.

You can, of course, take the subject matter from EzineArticles but see that the presentation and writing is unique.

It's illegal and unethical to take an article, adjust a few words, and attempt to publish as your own.

Come on man, don't you know the answer to that? There's nothing wrong with reading many articles to formulating your own opinion and views on a subject, and then combining them into an article.
But to take 1 article and paraphrase it? That's just weak imo.
What do you mean by 'is it ok'? If you rewrite it well enough its not going to be picked up as a duplicate by search engines.
In my opinion, just paraphrasing an entire article is not ok, it's weaksauce, that's just my 2 cents...
