I've got a server that's got a ton of bandwidth and free space. I'm just not sure what to use it on.
I've got a couple adult tube sites...but they never reached epic popularity status over the years. Maybe because of all the comp out there. My first thought, was this would be the bandwidth hogger without a doubt. (i was wrong)
Community wise.... I tried running a popular forum for years. But forums are hard to keep the communities together and popular for a long time. Everybody always wants more power....everybody wants to be a Moderator, etc. and it gets really annoying trying to satisfy everyone , while barely making any money in the process.
I gotta admit though, the guys here do a good job of keeping things in tact. ;) (forum wise)
Dating site ? I've thought about that as well...but once again, so much comp out there as is. Would prolly be a waste of time.
Needing ideas... If u had an epic server with a ton of space and bandwidth...what would u do with it ?

These days, server capacity isn't much of a limitation - trying to find something that people will want to come back to is the real challenge. And, of course, monetizing that traffic.
You are right that communities can be labor-intensive, and require a deft touch to keep them vibrant and avoid squabbling.

Don't do anything. Servers aren't perishable. If nothing jumps out at you right now, so much the better: You'll have the space and bandwidth next year when you come across something you've absolutely got to have.
Obvious analogy: Look at your personal computer. You're not running around looking for downloads to fill all that free HD space are you? It will fill itself before you know it.
